METZGETE WITH STEFAN WIESER
On the 3rd and 4th of October we serve a special three-course tavolata to share (CHF 79). We start with sweetbreads and chanterelles, lambs lettuce, jellied pork terrine with wild herbs and warm tongue salad. This is followed by a carefully prepared variation of liver, blood and bratwurst sausages, smoked pork ribs and cured bacon - served with rösti and champagne sauerkraut and our signature crème brulee.
